Our New Girls’ Night Tradition

Over the last couple weeks Hubs has been out of town on several occasions and with the summer coming up it will become a little more frequent. Typically YPW stands for youth pastors wife but in the summer months it meansyouth pastors widow as between summer camps and mission trips my husband stays pretty busy so Abby and I end up with a little one-on-one time.

While we both miss him like crazy, it is fun to have some girl time. We have even established our own little tradition for our girls night. While its fun to go out, we have even more fun when we stay in!

Breakfast for dinner has always been popular in our house but when I was diagnosed with Celiac disease last year it meant having to find new ways to enjoy one of our favorite meals. My saving graces are Gluten-Free Bisquick and Log Cabin syrup (which is both GF and free of HFCS).

Abby and I love pancakes while Hubs is more an eggs and biscuits guy so when he is out of town we have instituted pancake nights. Abby stands on her stool next to me while I prep the batter and she gets the fun of adding the toppings such ad blueberries or mini chocolate chips (I think she likes those the best!).

The extra fun part of our pancake nights is breaking the dinner time rule of eating at the table sans TV. Instead we pile up blankets and pillows and enjoy our pancakes while watching a movie! Last night featured chocolate chip pancakes and Tangled! For our next girls night I need to think of a new topping–any suggestions? I’m thinking maybe apple cinnamon or strawberry banana…..

So while we miss the man of the house, we enjoy our girls’ night in!

    My husband travels a lot all year long. When he’s gone Katie and I order an extra large cheese pizza and eat it for every meal until he gets home. It saves spoons for me, since I don’t have to cook, and it’s fun.

      I so wish we could do that! We both LOVE pizza but since takeout isn’t an option at this time we have to try other things. Sometimes I will make a GF pizza for us but its not the same! Have yet to find a crust that is as good as takeout!

    Jimmies! (Sprinkles) that was always a pancakes favorite in our house. And whipped cream, a variety of chips (chocolate, peanut butter, caramel, white chocolate, etc.), yogurt, and rumor has it Dad even put ice cream in pancakes once. Gosh, I’m getting nostalgic now!

    Not sure if Nutella is GF, but if it is, try that on the strawberry banana waffles! YUM!!
