Gluten-Free Recipe Round up for Super Bowl!

Who else is hosting or attending a Super Bowl party? We always have a big party for our youth and this is the first year I’ll be attending as a celiac so I’m looking for gluten-free AND yummy options to take so here are some goodies that I have come across:

Embarrassing moment of the day: I saw a Gluten Free recipe featured on my news homepage, so I copied the link and pasted it to your facebook wall. It actually looked really good. When the image and everything popped up I reread it… it was actually a “Guilt Free” recipe… which made me thoroughly disappointed for you. (And grateful I proof read before posting).

I recently had my daughter at the ER for a possible appendicitis, a student surgeon with lots of time on his hands asked if we had been tested for gluten issues since we are so fair skinned…which is ironic, because the red heads (husband and sons) were at home-ha! Anyway, luckily I have, but the red heads have not…have you heard of this being more of a fair skinned thing? Don’t mean to sound like an idiot, I just don’t know much about it, and would hate to damage my kids unknowingly.

Wow! I have never heard of celiac being tied to being fair-skinned! That is news to me! There is a simple blood test that can check for antibodies which can indicate a gluten-intolerance if you are concerned but if your family isn’t showing any other signs/symptoms I wouldn’t stress over it!

Oh wow. Each one of these was better than the next. I had a bunch of people over last weekend and we made a bunch of these snacks for everyone to munch on. We had two gluten intolerant friends coming and wanted to make food that everyone could enjoy. I have to say that every one of these was a success with the crowd. Thanks!
