Wendesday Check-in: Power of One #5

Power of One ChallengeI feel much better about posting this week’s check-in. Today’s numbers 128.4! So I lost 2.6 lbs! I’m still a little higher than I want to be but I definitely feel a lot better about being back in the 120s. This challenge is definitely not going the way I have planned but I am determined not to beat myself up over it. Poor Abby has been sick 3 different times since this challenge started and taking care of her has definitely taken a priority.

I still haven’t updated my measurements because somehow my tape has gone missing but its on my shopping list for this evening!

Here are my goals for the challenge:

  1. Hit the gym on my lunch break at least 3 days a week. Got to the gym once this week but also walked with Abby on Sunday evening (after she got over her bug and before I came down with it).
  2. Remove all soda from my diet instead replacing it with water and other healthy drinks. Not completely gone but I have dramatically cut back and if I am drinking soda now it is at least diet.
  3. Prepare dinner at home at least 4 nights a week, trying a new recipe at least once. Decent on preparing meals at home but have not tried any new recipes. Have one on the schedule for this week though!
  4. Lose at least 5 inches overall throughout the course of the challenge. TBD

11 in 2011: Favorite Healthy Snacks

Since being diagnosed with Celiac, I have really had to alter my healthy snacks. Before I kept whole grain crackers and protien/cereal bars in my desk (love the Special K crackers and fruit crisps) to keep me from hitting the vending machines when I got the munchies at work but now I am having to try out new things.

There are a couple varieties of Zone Bars that are gluten-free that are pretty good, especially the Chocolate Carmel Cluster. So I usually keep one in my purse or diaper bag if I am going to be out awhile or if I am unsure that I will havw other gluten-free options available.

Other stand-by snacks include lowfat string cheese and apples with gf peanut butter. I’m really bas about getting enough protien in my diet (which triggers migraines) so I try to sneak it in when possible.

The thing about being gluten-free is that it really limits your prepackaged options so its a good way to force fresh food options. The GF convienence foods that are out there (like cereal bars) cost a fortune and the taste (or lack thereof) isn’t worth the cost. Another things that compounds things for me personally is also having a nut allergy. I would love to be able to snack on almonds but the incessent itching that follows isn’t worth it. I have thankfully found a gluten-free and nut-free trail mix that is another great snack.

11 in 2011 – New Year’s Goals

I came across this super cute blog carnival called 11 in 2011 and couldn’t help but to participate! What a great way to get 2011 off to a great bloggy start!

I’m not a huge fan of the term “resolutions” as we all know how long we tend to hold onto resolutions and it just seems to have a negative connotation. Am I alone in thinking that? Instead I like to use to the word goals! So here are some things that I would love to accomplish in 2011:

~Health~

There is no need to rehash all of the my health goals when you can find them all listed here!

~Spiritual~

This one is a biggy and something that I have really wanted to do for years but 2011 is definitely going to be my year to succeed in finally reading through the Bible in a year. My friend Katie suggested this Bible reading plan so I’ve printed it out and I’m ready to go! Want to join me?

~Family~

I love taking pictures and dream of having a nice fancy DSLR camera, like this Nikon, but until then I snap pictures with my snazzy Kodak EasyShare. But most of my pictures revolve around occasions – holidays, events, etc – but not really the day to day. Time seems to be going by so fast! Abby turned 20 months old this week and will be 2 before I know it and don’t want to miss a single minute so I plan on doing the 365 Project! I will take a picture a day in 2011! Maybe I can learn a thing or two about improving my photography skills too! If you would like to donate a Nikon to help that would be cool too!

~Personal~

I know this one is going to sound cheesy but I really want to define my own style in 2011. I feel like I live in ON t-shirts, jeans, and sneakers. I just don’t feel like its ME but at the same time I’m not sure what ME looks like. I’ve kind of bounced around and tried out different things but nothing has really seemed to fit and I’m talking clothes, hair, and makeup. If someone would like to call Stacy & Clinton for me, I would be thankful (LOL). But seriously, I really want to spend sometime this year focusing a little more on making me feel good about myself. Yesterday I think I made a step in the positive direction and discovered the store New York & Co and I am in love (we have an outlet not 15 min from here – yay!). I bought an outfit where I felt mature AND confident but still my age (anyone else around 30 have trouble shopping for clothes that aren’t make for a 18 yr old or 45 yr old?).  A picture will be forthcoming in my 365 project :)
