So I have always dreamed of being the classic Italian mother who spoils her family with fabulous home cooked meal. And though I love my family and love to cook, those loves don’t transcend the bonds of time. As in, I have no time. Time has made me it’s bitch. So too often I rely on quick cook or the old reliable, fried rice. When I do find a recipe that is both quick and easy and on top of that super awesomely delicious, it makes me want to put on an apron and fan myself while saying “magnia, magnia!” This Italian chili will have you feeling the love too. Just don’t tell anyone how easy it is.
two 14oz cans cannellini beans
one 28oz can diced tomatoes with Italian spices
one pound Italian sausage
Execution: Coat a large saucepan with olive oil and cook sausage. Remove and set aside. In the same pan, add the two cans of beans and minced garlic and oregano to taste (I use about a tbsp each). Saute until softened. Add tomatoes and sausage and simmer for as long as you can before you find yourself eating it all out of the pan with a spoon.
